Normally it does not change.
However, you can say (somewhat old fashioned way) for example
-ewiczowa - when talking about Mrs. -ewicz (wife of Mr -ewicz)
-ewiczówna - when taking about Miss -ewicz (daughter of Mr/Mrs -ewicz)

There are 63 Kajdewicz's in Poland. The most are located in Białystok region - 24, less in Gdańsk -12, Opole -7, Elbląg - 7, Warszawa - 5 regions.

Ty Shaw? From what I can tell, it means "you dog" or "you are a dog" in Polish.

"Ty Shaw" does not sound anything like "You dog" in Polish, which is "Ty psie"

Very popular last name, 32525 Czarnecki's in Poland.
It would usually refer to the name of a place where the family lived at some point centuries ago, a place with a name beginning Czarn-, from the root czarny, "black." The name is especially likely to refer to the village of Czarnca in Kielce province, Wloszczowa district, but you can't really count on that -- there are too many other cases where it referred to any of a number of villages named Czarne, Czarne, etc.

Can't find anything about Krzymize, could you please check the spelling.

What it says is that wujek is a maternal uncle (your mothers brother) and that stryj is a paternal uncle (your fathers brother).

That is correct

What would be the original polish form of Stefan and Irene?

Osse-Gasowka? Osse-Bagno? - located in Podlaskie in the Wysokie Mazowieckie region and near Lapy

In ancestry research I find a relative listed as born in Osse-Gasowka and Osse-Bagno...anyone know if these areas are the same? Also is there any significance to the names? Reason I ask is I've found other areas that also have 'Osse' in their name.

By the way, this area is located in Podlaskie in the Wysokie Mazowieckie region and near the village of Lapy.

I don't think these areas are the same (but possibly they are near each other as the name suggest). It's like "west of downtown" or "east of downtown".
