I'm sory we didnt have monarchy or tyrany like the rest of countries living in the dark of middle ages.

still a monarchy man.

speaking of sobieski and the turks.. a few years back a saw tents and other stuff from the vienna skirmish at a special show at the Chicago Art Institute.. turks had some awesome gear.. the hussar gear was actually the other thing that i just loved from that exhibit.

is that fine grind? the russians make some kind of pumpernikel type bread that is way dark and soft/smooth meat and the skin is chewy but i have never had it straight from the oven either.

there are many "black" breads.. hard to tell what the one you tasted was like. and this being in Mass., that bread might have been a MA-PL bread anyway.

recipes 2 and 3 are some of the closest i have seen to describe the polish bread. i don't think you can make it in a bread machine though... partially because of the hot water and/or the egg white.. which is sometimes brushed on after the second water sprinkling.

from what i have also heard is that the oven needs to be of a certain type or construction.. what type i have no idea..

however, one of these days i am going to give it a go in my dutch oven. i'll let you know how it comes out, if it comes out. :D

the version i recall is this:

"nieborak" = someone/something poor, unhappy, unlcky poor soul/thing

If people from Poland are called "Poles," why aren't people from Holland called "Holes"?

beacause they are actually netherlanders.

that also = pollack and there are a few other veriosn too. btw. pollock is also kind of a fish.

not one for the machine that will come out anything like the pic a few posts above.

i don't think that the recipie given will yield that result unless annab left out a step or two.

i was wondering if anyone on here new the exact recipie for the kind of bread in the pic i mentioned. thanks

There is no bread in the world as good as Polish Bread. Sigh.

no kidding. i make a 300+mi round stock-up trip just so i don't have to suffer on wonderbread. lol

man.. winter is just around the corner. i am going to have to make some kopytka and pyzy.. it's been ages for either. mmm..

is there something added to mashed taters in PL? i can't replicate the taste i get from restaurants and what i recall of grandma's cooking. thanks

Food / Looking for a Pickle Soup Recipe - Polish ogórkowa [28]

Dill Pickle Soup: (Zupa Ogorkowa)

6 cups of beef broth
1 lb cauliflower (cut into small flowerettes)
2T of instant flour
1C milk
1 egg yolks
2T soft butter
4 large Dill Pickles
2/3C liquid from the jar
2.5C boiled and sliced potatoes

Bring broth to boil.
+ flour mixed with .5C of milk
bring just to boil. remove from heat.
+ egg yolks mixed w/ butter
+ pickles, potaotes and liguid

heat but DO NOT BOIL

serves 12 although if you eat it like a polish person then i say it serves 4. lol

i also tend to add some dill to this (1t-1T depending on how much you like dill)

here is a very similar soup and it can also be served cold so it's also great for summer:

Cauliflower Soup:

7 cups of broth (chicken or beef, veggie stock will work also)
1 lb cauliflower (cut into small flowerettes)
1.5T of instant flour
2C milk
2 egg yolks
1T of DILL

Bring broth to boil.
+ caulifliwer, simmer for 25min.
+ flour mixed with .5C of milk
bring just to boil. remove from heat.
+ egg yolks and the rest of milk
+ DILL

stir and serve

this serves 10 according to my book but once again, i'll have to say 4.
