Yeah,Spot on! I have watched those guys pour Guinness or other stouts very slowly to minimise the head and then pour even more slowly and skim off any excess froth....

Guinness and other stouts need a head as that is the creaminess that offsets the bitter beer.Not too much and not too little.

Hey, people, watch this wonderful foam again!!! This time accompanying my another comfort dish - fried potatoes with sausage, mushrooms, onion, chive and scrambled eggs.

Yes, I know it resembles an omelette, when you look at the second pic, the stuff can be lifted with a wooden spoon. But it is a wrong impression - it is scrambled eggs!!!!

Yes, smoked but without oil. Those fish spines are in good shape while oil damages them to a great extent.

I love nibbling at small fish - I find it sort of exciting.
Upper row - whole fish.
Lower row - first, headless and gutless fish. Next, skinless. A lot of work but I like it. It occupies my fingers and mind and allows me to relieve stresses of everyday life.
