Food / Eating Kielbasa - how do you cook yours? [119]

Here is a good one to try--------very easy and tasty.I've made it myself.

1 1/2 lb Pork loin or butt
1/2 lb Veal
Salt and pepper
1 Bud of garlic
1 ts Whole mustard seed
3 tb Water

Remove meat from bones, cut into small pieces and run
through a coarse knife of a food grinder. Add 3
tablespoons of water, pound the garlic, and add the
seasoning. Mix very thoroughly and stuff the casings.
The sausage is then ready for smoking. If you don't
have those facilities, you can boil it for 30 minutes
in rapidly boiling water, or you can place the sausage
in a baking dish, cover with cold water, and bake in a
350F oven until the water is absorbed.

Those memories take me back to the days when my mother used to make czarnina fresh when I was just a kid.The sad part was ,which I didn't know at the time,that the duck I had in the backyard would disapppear at the same time the soup was made.!!!!

In the UK the hunting of rabbits involves the use of ferrets (domesticated polecats)in rabbit hunting.
First the hunter finds the rabbit warren. Once located the hunter lays down catch-nets over all the rabbit holes. The next step is to place one or two ferrets down the rabbit holes without disturbing the catch-net. Now the hunter waits, for a rabbit to run out of the warren into a catch-net.

Shooting with air-rifles does not need a license but the use of shotguns requires a license.

this is the season to go hunting for rabbit.That's as fresh as you'll get.Just got to make sure to remove all the buckshot.

"Perla Chmielowa Pils was a lot more mild than other Polish beers, which was ironic, because this had more alcohol than any other I've had, At 6.2%. I barely noticed it. Seeing as how it was a half-liter bottle, you'd think I would've had some effect from the alcohol, but I didn't. I don't know, maybe it wasn't really 6.2%."I was quite enjoyable.

Catch and release is a great way to fish.The great part of fishing is reeling the fish in.Some put up real good fight.So,it's nice to release the fish after giving me pleasure of fighting with it to reel it in.Lots of exhileration and a sense of accomplishment after pulling in one of these fighters.!!!!

They taste great roasted in the oven but if you are using stuffing, plan on one cup per game hen. Do not stuff them until just before you put them in the oven to avoid any potential for salmonellosis.

The US and Canada has made fast food a work of art.Anything edible your heart desires is made into fast food.With both husband and wife working these days,it's nice to be able to pick whatever you like,ready made at the grocery store.What a time saver when both of you are on the go from morning till night.

Friends of our have a farm and we are able to get a fresh supply of blood when the ducks are ready for the kill.This is only good when the blood is very fresh

Here is what I found on £azanki and why it's not readilly known:
"Lazanki arrived in the Polish-Lithuanian Commonwealth in mid-16th century when Bona Sforza, Italian wife of King Sigmund the Old, brought high Italian cuisine to the country. Unlike most Italian dishes in these parts of Europe, lazanki has survived into the 21st century, although the long and cultural history of the dish has been largely forgotten. Stiff wheat, rye or buckwheat dough, rolled thin and cut into triangles or rectangles, is boiled, drained, and eaten with melted pork fat, vegetable oil, or sour cream. In Poland, they are often mixed with cabbage or sauerkraut and small bits of sausage, meat and/or mushrooms."

Bottom line is that that in the" ma and pa" shops you will pay a premium for the "hands on" service.In the the grocery chains,the prices are cheaper but you are on your own to fend for yourself.Like they say---"you get what you pay for".

This cake is good any time of the year.Because it's more of a "tort" or fancy cake ,it is used on special occasions.Basically it's a chocolate cake.----and who doesn't love chocolate cake????

Here is one recepie:
•1 large potato, peeled and grated
•1 cup all-purpose flour
•1 cup whole milk
•Salt and pepper to taste
Preparation:
1.Bring a large saucepan of salted water to a boil. Meanwhile, in a medium bowl, mix all ingredients until a thick paste forms.
2.Dip a teaspoon in the boiling water, then dip teaspoon in the dumpling mixture, picking up half a teaspoon or so, and slide it into the gently boiling water. Continue until all the dumpling dough is gone.

3.Simmer about 20 minutes or until dumplings taste done. Drain in a colander

well----I found a recepie-- But it's in Polish--The only thing you can do with this is have it translated.

Składniki:
10 szt białek -- ciasto
1 szklanka cukru -- ciasto
4 dkg mąki -- około 3 łyżek - ciasto
1 szklanka orzecha -- zmielone prażone i mogą być włoskie - ciasto
200 g masła -- Krem
200 g mleka -- słodzone skondensowane - Krem
15 g kakao -- Krem
Ochłodzone białka ubić na sztywną pianę, dodając stopniowo cukier, aż objętość zwiększy się 4-5 razy. Dodać zmielone orzechy i mąkę, delikatnie wymieszać całość. Wyłożyć natychmiast ciasto na 2 okrągłe pergaminy lub inny papier do pieczenia, suszyć w piekarniku 4-5 godz. w temp. 100C. Po wystudzeniu zdjąć papier z placków, przełożyć ich kremem, pozostawiając nieco kremu na wierzch tortu (2-3 mm), udekorować, obsypując boki tortu drobnymi orzechami. Krem: ubić masło mikserem na pianę, dodawać stopniowo mleko zagęszczone i kakao.

Bushy's Brewery on the Isle Of Man brewed a special ale. Called Golden Oldie, the first batch sold out immediately. Looks like it's worth a try.
