Wisniowka is a Cherry Cordial

A cherry-colored, semi-sweet fruit flavored cordial made of juice and infusion of selected, masterfully combined aromatic Polish cherries of the succulent type, picked in orchards specially cultivated for this purpose in the region of Poland where the soil and climate are most propitious. Wisniowka is also made from premium spirits. Its pretty color adds a festive touch to the table, and its delicate harmony of cherry flavors is simply a delight. Wisniowka is the best known Polish Cherry Cordial, most appreciated in the world market. Polish Wisniowka is much less sweet than other cherry cordials and because of that is a perfect ingredient of cocktails. It is a favorite drink of ladies, best served at room temperature with coffee and desserts. Excellent after meals slightly chilled. Also a superior mixed drink base. For its superb quality Wisniowka has won numerous gold and silver medals* at the international and domestic competitions.

We modified the original recepie to be made with ingredients we could actually find in my super market. The big changes are barley instead of wheat. You can usually find barley with the dried beans. You could probably substitute any whole dried grain, like oats. Even rice would probably work, but then it would be more like rice pudding and you would loose that whole grain texture. The other big difference is the supermarket did not have bulk poppy seeds. So I substituted Solo canned poppy seed filling. This is already processed and is about half sugars, so I cut the amount of sugar or honey from the original recipe.

An immediate improvement that comes to mind is that this could be made less labor intensive by making the porridge in a crock-pot. I also wonder if the pie filling and nuts could be mixed into the warm porridge, removing another step.

Some additional sweetness or pizazz could be in future versions. Being that this is a very classic dish it has a very subtle sweetness and simple flavor. The flavor could be nicely enhanced with a 1/4 teaspoon of vanilla, or a little cinnamon or nutmeg. If it isn't sweet enough your could add the entire can of pie filling or mix sugar into the porridge before it cools. If you wanted a more classic sweetener the original recipe uses honey, instead of sweetened pie filling, so that would add sweetness as well as a more authentic flavor. A popular flavor in these classic desserts is always dried fruit, such as raisins or apricots, which could add sweetness and a more complicated flavor as

Here is the history behind New Year's Day pastries-Novolatki

Among folk customs of all nations we come across a number of festive occasions dating back to the remote past. As the calendar year was nearing its end, peasants were beginning to think of the year to come. They were concerned with the harvest and the well-being of their domestic animals. This was the reason why on the New Year's Eve small animal figures made of flour, water and a bit of salt was baked; on the next day they were given to the live animals - each should have eaten a pastry figure depicting itself. In that way people hoped and believed that domestic animals would be healthy in the course of the coming year. Cows, horses, sheep, goats, hens, geese, ducks, dogs and cats were typical New Year's figures. Out of this custom, which had survived till the 1920s, a new tradition has developed and has been maintained mainly in schools and nursery schools. Children shape and bake various nowoletka for fun and pleasure or as presents there.

Recepie for Novolatki
Flour and water are mixed together to make a leaven which is then left in a warm place for two days, and later, after adding a greater amount of flour and a necessary bit of salt, the dough is kneaded until it is ready to be used for shaping figures from. It is important that the dough has been kneaded for a long time and thoroughly. The rest of the dough is covered with a wet cloth to keep it from drying up.

Well---you asked for it so--------------here it is !!!!!!!

HERRING IN MAYONNAISE (sledzie w mayonezie chrzanowym) -- use marinated herring out of a jar and drain . Plunge 3 c herring, cut into 1” - 1-1/2” pieces, into cold water briefly and allow to drip dry in sieve. Line serving dish with lettuce and arrange herring thereon. Fork-blend 1/2 c mayonnaise 1/4 c sour cream 1 heaping T prepared non-creamed horseradish (m/l to taste) 1 t mustard, juice of 1/2 a lemon 1 t confectioner's sugar. Pour over herring. Chill at least 1 hr before serving. Optional: Decorate herring with hard-cooked-egg slices and sprinkle with finely chopped chives.

It smells because you you kept it too long after you bought it..The casing is natural and it starts to decompose with time. When you buy it,use it within a couple of days.It's best when it's fresh.

We have a tradional meatless supper with fish,pierogies,cheese etc .Then it's off we go to the Polish Church --St.Stanislaus Kostka--for the Wigilia. --------------------------- ----------- and yes I personally caught these fish in the fall of this year.

The best way to get around your problem is to have you brother in the U.S request that you visit him.This way he guarantees that while you are there he will look after you.In Polish it's called a "Zaproszenie" ----- this usually works .

Actually I just had some this morning.I like it with kielbasa fried on the fryng pan.You gotta have the Polish rye bread with it. It's delicious----and we remove the skin prior to frying since it's mixed with the sliced kielbasa.

Being in Poland several times and talking to some of the people there,they have a misconception that in Canada and the U.S.money grows on trees!!!!!!So,when mail comes from North America,they think it`s full of money and that is why mail disappears over there.

I find that the temperature is very close to the same as we have here in southern Ontario,Canada.If you look at a globe ,you get a good idea on the distance Poland and Ontario are to the Equator.They are almost the same .

In canada you can buy this stuff in a liquor store ONLY with a doctor's perscription. It's great as a rub for back pains and sore muscles.I am told that it works.Also dilute it 50% to make a pleasant drink and add some syrop to give it some flavour.

After the Congress of Vienna, St. Petersburg had organized its Polish lands as the Congress Kingdom of Poland, granting it a quite liberal constitution, its own army, and limited autonomy within the tsarist empire. In the 1820s, however, Russian rule grew more arbitrary, and secret societies were formed by intellectuals in several cities to plot an overthrow. In November 1830, Polish troops in Warsaw rose in revolt. When the government of Congress Poland proclaimed solidarity with the insurrectionists shortly thereafter, a new Polish-Russian war began. The rebels' requests for aid from France were ignored, and their reluctance to abolish serfdom cost them the support of the peasantry. By September 1831, the Russians had subdued Polish resistance and forced 6,000 resistance fighters into exile in France, beginning a time of harsh repression of intellectual and religious activity throughout Poland. At the same time, Congress Poland lost its constitution and its army.
