We do? I think I've heard the name but I can't say for sure I've ever seen it... it's just not a thing in most of the US (like kefir). Cottage cheese is, of course, a staple.

In Mexico I think they use Oaxaca cheese, Monterey Jack is usually used for Mexican dishes in the states... (not sure how available either is in Europe - not to mention fresh corn tortillas) the idea is a bit of an almost goat cheese sharp taste but melty like mozzarella...

Unfortunately nacho chips wouldn't work so well, fried fresh tortillas taste completely different....

I do a Mexican bake with nachos and mimolette (similar to what gets called 'cheddar cheese' in the US, completey different from British cheddar) and onions and tomatoes and ground meat - cumin (kmin rzymski) is absolutely necessary - fortunately it's much easier to get now than a few years ago.


do you mean bigos? It's appearance does not inspire confidence with foreigners exposed for the first time but most end up loving it (IME).

If you're talking about the chilaquiles the point isn't the looks but the taste (and textures) it's a bit similar to tortilla soup (also delicious). It's corn tortillas and onions and meat and cheese cooked together unitl it's a gooey delicious mess

Gyros is the Greek version of Shawarma (more or less kebab in Europe).

In Greece they're made differently than in the US as they're liable to have french fries in the wrap along with the meat and vegetables...

In Europe Greco-Turco-Levantine food serves a similar function to Mexican food in the US....

In Mexico the food differs strongly by region and is mostly unlike US Mexican food (originally from the border region).

My US favorites include nachos compuestos, navajo tacos (made with native american style fry bread) and enchiladas...

In Mexico my favorite meal was probably chilaquiles

Back in the 1990s I had a very educated friend who emigrated from Poland to the US by way of Greenpoint.... she said the movie Szczęśliwego Nowego Jorku was not an exaggeration at all, if anything it was understated....

These were mostly people from small, poor villages in Eastern Poland and while they weren't coping brilliantly in NYC (often no English and had memorized a few routes between home, work, church and shopping and were ignorant of or uninterested in anything else) they wouldn't do much better in a large Polish city, even if there were jobs for them which there weren't at that time....

no I make mine more hamburger shaped... little discs that are flat on either side....most Polish people make them more round...

A weird way to cut them... I cut them horizontally (two flatter round parts) rather than slice them.

I also like meatloaf sandwiches (meatloaf is a bit like pieczeń rzymska though usually made with beef and maybe with some tomato sauce baked in on top).

Vegan youtube is.... interesting, like a garbage fire in a third-world carnival. There's never too long between some ridiculous bout of nervous drama.... whether some high profile vegan can't hack it and has gone back to consuming animal products or financial shenanigans with "activists" not wanting to actually show a big donor where the money (7 figures) is going...

The latest kerfuffle is about an Australian (Australian vegans are the most consistent sources of amusing psychosis...) who referred to animal agriculture as a 'holocaust' which for some reason revived an old dispute about "white veganism" (wokeness infects them too).

My favorite moment ever was when one vegan woman was crying about the death of her pet chicken a "rescue". She said she had never loved anyone as much as that chicken.... and her husband is sitting right next to her! Comedy gold.

A lot of factors come into play. The cultural 'fit' between the old and new countries is a factor as are ease of migration.Lower barriers to migration means that the the arrivals will be kind of... mixed (at best) like Poles to the UK from 2004 on. When migration is more difficult that sorts a lot of the riff raff out.... (it's always been harder to migrate to North America so the pool of migrants are better on average).

The real culprit IMHO is snacking. Traditionally (before 2000 or so) people would eat three or four (often heavy and fatty) meals a day but between meal snacking was all but unheard of... its the "grazing" food model where a person never goes long without some kind of small snack that seems to propel overweight children...

what do you want to do if they get in anyway?

I've yet to hear or read anything resembling a coherent answer from a progressive... the idea of limiting immigration pains them yet without being able to answer those questions then a person is de factor in favor of open borders (and the degradation of the concept of citizenship and countries and welfare etc etc etc)

Latin American immigrants are more likely to adapt to European countries than those from Africa or the Middle East.... but it's not any way to run a country (either Central America or the US).

start by giving citizenship to over ten million people with no legal right to be in the country and de facto invite tens of millions more in while over half of all small businesses have gone bankrupt....

I remember in Bulgaria once there was a stand selling fresh baked things for locals (one British tourist ahead of me was shooed away like a stray dog when she asked a question in English) I could read the menu well enough to give convincing enough order and it was great, a couple of different baked pastries with various fillings that were filling and delicious (and not as heavy as some Bulgarian food - usually Bulgarian equivalents of Balkan-Greco-Turkish dishes are super heavy).

But then I also like langos and think that could be a food truck type thing here.... I used to have my own rating of the best langos in Budapest (number 1 at the Ecseri flea market, number 2 and Hold utca market... but since closed : (

I would think that some Bulgarian foods could be popular... especially some of the baked things, lots of tourists go to Bulgaria but AFAICT they don't necessarily eat much local food made for locals which is better than hotel/tourist restaurant fare...

Could be worse.... I remember back in the 1980s in Poland I happened to meet some American tourists who'd just been in the DDR... they said Dresden was the most depressing city they'd ever been in (and they had traveled a fair amount in the third world).

I had a similar response in Constanta, Romania.... the old town could look amazing but it was so neglected, beautiful old buildings just kind of rotting all over the place...
