Half-free Christmas bigos. SMACZNEGO at Christmastime!

Although we don't celebrate, last year, after much nagging on my part, my wife finally made me two classic Polish Christmas favorites (I've been told): Kluski z makiem (noodles with poppy seeds) plus grzadki i koper, kinki z smietanka surowa aka beets with dill, caraway seeds and sour cream.

Yum-yum!!

You could easily fool me. Holly cow!! Bigos, the pinnacle of Polish culinary traditions.What a f*ck ,konski zab does not qualify as corn on the cob. What Tradition are you supporting, picnic at the country fair? , Tradition excludes changes; that's what is called Tradition. Traditional Polish hunter's soup does not need additions; it is perfect in its original form, adding pepper borders on blasphemy. What's next, black bananas?Sh*t, In my vivid imagination, I picture Paw the Hunter traversing Puszcze Bialowieska trampling, dorodne borowiki in search of corn and peppers:::)))

Paw corn on the cob is delicious, the American kind. What I got in Warsaw, Poland, on my last visit was an abomination KONSKI ZAB not for human consumption.

Bigos, and corn combination should not be allowed. Are you trying to kill traditional delicacy, you murderer?

Why do you hold me responsible for what you got in Warsaw??? I live in southern Poland`s countryside, 350 kilometers from Warsaw. I love this city but their culinary customs aren`t the same as ours in my rural area.

Why not?? It is still Polish traditional bigos, only a little enriched with unusual side stuff. We do need more diversion in our lives here, believe me. The war is so close and you still want to deprive me of having my fave corn???

Well, that's better. what is remaining to be done, for you to distinguish between "konski zab" and proper sweet corn.

I could make a meal out of just the sauerkraut and shredded fresh cabbage.
Bigos to me would be adding some nice ground venison to it.

That's good, very good, Johnny, but the crazed innovator Paw insists on ruining perfect Bigos by overloading it with corn on the cob, not the sweet corn, by the kind designated for cow feed ::::)))

hard to describe bigos as 'perfect', however I find that most Polish food (apart from the cakes, and even then...) is lifted nicely by the addition of chillies.

You might be correct, but in Poland, spicy food was not widely spread and newer very popular. Some of it is an acquired taste. In my case, seafood is the perfect example,

I was not able to swallow the cherrystone clam; it expanded in my mouth to gigantic proportions, making it impossible to swallow.

Again, you seem to be an authority on something you know nothing about.
There are Polish food stores all over the place with imported Polish foods and spices but since you don't live here you wouldn't know that.

We have organic cabbage grown here which is much better than the cabbage grown in your backyard in Poland where dogs pee on it.
And unlike Poland, here in America, we grow it fresh year around.
It's not taken from some stored moldy root cellar or basement.

I LOVE bigos, in fact, can't think of a mainstream Polish dish which I don't enjoy:-) Germans typically refer to it as "Jaegerkraut" or "hunter's cabbage".

Are you not paying attention to my answer? Johnny loves Polish food, including bigos. However, objecting to your photography presentation is a different matter altogether.

The ecstatic part of the presentation can not be overstated, and if not careful, it might be disastrous; this was what Johnny was objecting to.

To do it properly it should be done days in advance by heating and cooling several times for full flavor.

My photography presentation is standard like on thousands sites which contain such photos. Stop twisting coz you are defending johhny`s silly words only because he is your Am buddy while you are no longer a true Pole but an international mish mash after 40 years in the US. Ha!

That is not where bigos is concerned. Sourcraut is no different than Polish. I make my own. My bigos is superior to anything you can make unless you are a hunter and smoke the venison before adding it to the percolating pot. Pork is a distant second, an imitation of the real thing. Notice the absence of corn and abundance of borowiki

Not really.. You have other varieties of cabbage in the US, they have different taste than Polish ones. Also, different soil and climate. Don`t tell us you make Polish bigos, then. :):):)

In addition to Polish sauerkraut from all the supermarkets and thousands of mom-and-pop shops. Authentic from Poland, can you hear me now?
