Check out £ańcut its a nice town with a castle, not too far from Rzeszow.
Zamość is a must-see. It's a UNESCO World Heritage Site and nicer than the other places mentioned (though Sandomierz is quite pretty in its way too).

Search for Solina or Polanczyk in google
Also Krasiczyn could be interesting

I'd have to second that. Zamosc should be required viewing for all visitors to Poland. I'm always amazed at how few tourists there are in the place.
Sandomierz is also well worth a visit, but perhaps not at the weekend.
In the same sort of area as Zamosc is a nice little place called Zwierzyniec with a wonderful brewery and a nice park with a church in the middle of a lake. And you need to stop in Szczebrzeszyn (it's on the road from Zamosc to Zwierzyniec).
Przemysl is worth a visit too, as is Sanok.
How long would Warsaw-Zamosc drive be (assuming no snow) ?
This website is quite helpful for calculating distances and driving times - it's in Polish only but fairly self-explanatory. You can also put in places you want to stop at on the way.

Depending on time of day and how you drive, about four to four and a half hours would be a good ball-park figure. But if there is snow (or if there isn't), the train to Zamosc is a delight.

I much prefer viamichelin.co.uk to the other options.
And you need to stop in Szczebrzeszyn
Which hosts two monuments to the famous beetle from the poem. However, those statues show a grasshopper, not a beetle. Crazy Poland.
