How are they different ?

US varieties are all F1 hybrids while in Poland most aren`t and traditional farmers use old Polish cultivars from decades ago.

This one is the best for Polish climate and for fermenting. Do you see Polish colours on the packet? Read and learn, głąbie kapuściany. Ha!

You can buy Polish cabbage seeds here in the U.S.A.

While in Poland "most" aren't but some are.
In the U.S. most of our cabbage comes from Canada.
Sit you down blindfolded for a taste test of six different kinds and you couldn't tell the difference if it was grown in Poland, the U.S., Canada, Russia or if it was F1 or G2.

And the ones in the picture are hybrid seeds, aren't they ?

Stop twisting it, I said "most" of our cabbage comes from Canada.
I am sure Ptak grows his own cabbage from Polish seed but he would never tell you just to keep you guessing.
Besides, what makes Polands cabbage so special.
My guess is that hey are very inferior to a hybrid.

That sour bitter Polish cabbage just doesn't cut it compared to the sweet hybrid stuff.

Well it's time for swięta and that means a digital detox too. We have herrings, barscz and polish salad so keeping up the traditions. I wish all PFers a very happy holy days and a rocking new years eve. and remember to be nice on this forum over this sacred time.

Paw corn on the cob is delicious, the American kind.

Exactly. That is why I decided to have my Polish bigos with corn on TWO cobs. Just to honour you, a Polish expat in America. I added two avocado halves with bigos filling, I hope you won`t mind coz Mexico is America`s closest neighbour and you surely know a lot of good Mexicans in your neighbourhood.

The taste - incomparable to anything you have eaten so far.

Yes, coz I used a flash while taking a photo. And my camera settings were on enhanced light, too.
How about now?
If it still looks too pale, the reason might be that I eventually didn`t add tomato paste. I can be so forgetful.

You are right; the color resembles mizeria , much closer than bigos, Not to mention the crazy additions. However, bigos is perfect the way it is; his experimenting is a great subtraction instead of multiplication.

Consider the afront to delicious razowiec, the only allowable addition.

his experimenting

My experimenting is a result of my general versatility. which also encompasses taste. Experiment in my second name.
With or without experiments, it is still classical Polish bigos. Anybody who denies it is an azhole. Simple.

I didn't think it looked much like mizeria (one of the nicer Polish dishes). I've seen bigos that pale a few times, though the darker one with red wine is always better.

It works well served in giant Yorkshire puddings (as does anything really).
