1. normally it's safe, but will often be fake, oscypek should be made from goat milk, while most of what you can buy from those people, will be made from cow milk and won't have the characteristic taste.

2. no, the bottle includes something that's called "żur", it's sort of mild acid - the main ingredient of the soup, not ready for serving yet. you use it like vegetables in a vegetable soup :)

Nowadays, you don't need international licence in the EU..
They are all, theoreticaly, printed according to a template.
Like Decorator I was supposed to change my license fot a Belgian one, but I didn't do it.
I have standard Polish one - the pink stuff, looking pretty much like the English.
At least in Belgium I was able to buy and register a car without changing the license into a local one.
Only a German policeman looked at me strange after an accident and asked three times whether the car was actualy mine, bastard.

there are some in bigger cities, mainly around universities, I wouldn't say there are many, though.
but I think since so many left to England to work there are much more now visiting friends, girl/boy-friends and so on.

in big cities it's always easier. to my opinion, you've got good reasons to heave fear about it, but on the other hand I wouldn't exagerate here.

there's some rasizm, or rather fear from the different. for most people you'd meet you'd probably be the first ever black person met. i'd say, expect some time for yourself to accomodate the attitudes and for them to accomodate you. you'll just have to say to yourself that for many you're something (if I can say so) they've never encountered before.

but at the end of the day it would all turn to just getting to know a new person.
the risk is always there, but then again, you'll never know for sure if you don't try, right? :)
I say, you'll be fine. Poland still learns to accept diversity. We've already got quite some Turks here and there and from what I hear they feel fine.

Not necessairly. To have a perfect theory one must prove it. It's sufficient.
I'll give you an example.
Gravity is a theory and it's a fact, right? I believe you agree with me on that.
It's been proven to exist and we know for a fact that gravity on smaller planets (or moons) is lower due to the planets size. So we even know one of its characteristics. True? True and proven.

However, scientists until now can't explain it's mechanism. We don't know how to generate or influence gravity. There are facts about it unknown to man, yet the theory is true :)

Darvin's theory is even stronger, because it happens to be proven and, in addition, supported by a vast number of facts.

your grandmother called it cvas (kwas)? it means "acid". it may be a localised name for this version of barszcz (borsch i believe is the word in English). It might have been called this way because originaly the main ingredient is beet-acid-which should be prepared in advance . In your recipe you use vinegar instead, that's why you smell it all over the place

You shouldn't have much od a problem in a city like Wrocław.

I've got a friend who did exchange in Kraków. He said it was fun. The universities provide a course that's called "Survival Polish". It's a way to quickly learn the essetnial stuff to be able to painlessly survive.

Wrocław is a westernised city, I think you'll be fine there.

Regional expressions are not considered mistakes or bad language. Though, they may cause confusion.

correct: Kwiatki są białe. - in this case it's a matter of pronounciation, but I did see it written. a serious error.

but it's very simple:

you mix an egg or two with a glass of milk and a glass of water (you can use only water but it's not as good or only milk and it's great, you can use less than glass, that depends on how many pancakes you actually want to make) and add flour to it, now how much flour you add depends how thick you want the mixture. normally you want to reach consistency of butter-milk. add also a tiny bit of salt. fry the thing like crepes.

some add also a bit of sugar to the paste, but I don't like it. the cake istelf becomes sweet and it fries a bit differently. try, you might like it.

that's about it. now you can serve it in many ways, for instance

jam rolled in and butter-milk and sugar on top or
pate inside, with some salt on top - this one is not sweet
cottage cheese inside, butter milk outside.

I just took a loog at the PWN Polish Dictionary. Normally the information you're looking for is there but it's not directly mentioned. It's described in terms of the word "something/someone", like cases.

example:
to wait - czekać.... na coś/na kogoś
you have these little clauses that do give an answer, but in order to understand them you need to understand to which questions the cases answer, which is pain in the butt.
