Cooking in the Polish countryside - dishes are simple but tasty. And fattening coz we need a lot of calories for hard work. In the summer we use our own products except meat and poultry.

Stuffed zuchini - minced meat mixed with rice, topped with cheese.

Another version - shredded roast chicken, with mushrooms, canned corn, red beans and minced chickpea. Yummy.

or

For such food

hmm, if you like it, you can have more:

Meat pierogis in thick fat with crunchy pieces of fried lard called skwarki

or

pork gulash in mushroom sauce over curly pasta

Green salad for side dish and beer included

Have you thought about opening a restaurant/eatery with homemade food.

No, never. I am a parent and teacher, as johhny says.

One more: the healthiest of all - fried fish ( flounder)
and smoked roasted chicken.

I doubt that a hedgehog would eat a mole.

Look. One stuffed complacent satisfied hedgehog. I think I will adopt it as our new garden pet.

Do you know what forecrop and aftercrop mean???
Here: this little patch had fava beans as forecrop. I picked it in mid July and then cultivated the ground for the aftercrop - aragula, black and white radish, lettuce.

What happened to fava beans, one of my most fave pulses? We ate a litte but most I put in the freezer for future occassions. I get a taste for fava beans a few times a year.

fava beans

Broad beans?

Delicious. One of my favourite veg.

I like the way bobby beans (bób) are eaten in Poland.

Yes.

I eat the skins too. The varieties traditionally grown in the UK have different, softer skins and are usually served with meat. I quite like the Polish way of boiling a lot up and munching them all one by one.

Cooking in the Polish countryside

Fish nuggets, kasha, green beans, pickled cucumber:
Simplistic sushi - I always prepare this kind as the least time consuming. Content: smoked salmon and winter sprats
Artichoke, corn on the cob and pizza edge scraps which my children usually reject
Zucchini pancakes with mushrooms, my wife`s culinary art

In another thread I said I need to impress my wife with other things than my hair which is almost gone. So, recently I hammered a large strip of tough concrete into pieces. The strip was about 2 metres long, 0.7 m wide and 18 centimeters thick. It was dug in the ground next to the house, probably the previous owners were thinking of building an extension of some kind. Its presence there had always annoyed me coz the grass didn`t grow well over it. I broke it with a medium size hammer coz I had lent my pickaxe to a friend and it didn`t return yet. My wife seeing such a stunt was overwhelmed with awe and respect. :):):) Now she will do anything for me. :):):)

Well, in my case, she probably preferred even stronger intellect and my extensive knowledge. :):)

Admit it, your wife always stumbled over this concrete.

she probably preferred even stronger intellect and my extensive knowledge.

My knowledge concerning sex mainly - I studied such books as the Encyclopeadia of Sex at about 12. And I read everything by Starowicz, Wisłocka, Imieliński, Van der Velde etc. My wife was immensely impressed how I put that knowledge in practice. hahahahahahaha buhahahahaha

your wife always stumbled

Impossible. As I said, it was dug in the ground, with about 10 centimeters of soil over it, so the grass dried out in the spot in hot weather and I was pissed off seeing such a strip of barren land in the lawn behind the house.

Cooking cont.
Just green beans, mizeria cucumber salad and fried salmon for a kid who doesn`t like potatoes or kasha or rice. My poor wife has a big problem with it coz practically everybody likes different things. Luckily, I usually cook for myself so one burden off her shoulder. :):):)

One stuffed complacent satisfied hedgehog.

Apart from the hedgehog, we also own a squirrel. Only one right now so I am worried if it stays with us longer. But the conditions are just perfect - walnut trees everywhere. Paradise! We started building a wooden house for it.

only the gray ones

You mean the UK and the US, of course. Most Polish squirrels are red, but once I saw a melanistic all black one. I even have a photo somewhere.

You mean the UK

They're nearly all grey ones there. There are only a few places left where there are colonies of red ones. They are heavily protected now.

The grey ones came on ships from America as stowaways and killed their red cousins. I hope that won't happen in Poland.

Mind you, Poland has a lot of squirrels. Some people talk about the "Europe of rabbits" (Britain, France etc), where there are a lot of those, and the "Europe of squirrels" (Poland, Finland etc) which have large forests and there are a lot of squirrels.

Uk.

I see the gray ones all the time. They run on my balcony rail and dig in my pots a lot

The grey ones

I haven't seen a red squirrel since I was a kid, maybe 50 years ago or more, we have tons of greys in our garden and I have two massive, ancient, oak trees at the end of my garden. They love to run along the tops of my wooden fences.
