I worked in HR for several foreign IT companies in Krakow. I've had hiring managers from the U.S. and other countries regularly pass over local Poles and sponsor visa's for similarly or less qualified candidates. I even know one multinational that has a customer service center in Krakow that has on maybe 2-3 Poles on it's roles and 30-40 people of mix backgrounds. Keep applying, foreign companies with foreign hiring managers are your best bet.

USA, Canada / Obtaining Polish passport in the US? What do I need to do? [4]
When I was applying for a passport in Canada 3 years ago I needed proof of citizenship, had to complete application form in Polish - no English version and they didn't translate it for so be prepared to read and write in Polish. You'll need passport photo to Polish standard and maybe Cash, Consulate in Canada didn't accept plastic only paper money.

Life / Health Care Quality in Poland - NFZ vs Private [4]
Looking on opinions on quality of health care in Poland, NFZ vs Private - in particular on orthopedic surgery. I'm in need of an ACL reconstruction and am not sure whether to go private or through ZUS as I heard the national system isn't well funded. I've spoken to 20 differed orthopedic centers in the region and none of their doctors will consider doing a surgery through NFZ. I'd prefer not to pay out 10-14K for the cost of surgery privately (average price in Krakow) as it would require taking out a loan. If anyone has 1st or 2nd hand experience, would be very interested in hearing it.
