I'm a British citizen, do I need to apply for a permit before I can work in Poland? Do I have to register for residency?

Nope. You'll have to get a NIP (same as UK NI number) - but this is painless.

Officially, yes. No consequences if you don't - however, it does make life considerably easier if you intend to stay here.

i'm planning to stay there for few years then probably move back to UK when the kid starts school. Do u know where I should go if I want to apply for resident permit?

You will need to go to the county hall for the are yo will be living... (There is millions of threads on here about it) when are you thinking of moving?

Are you planing on teaching English?
What part of Poland are you planning on moving too?

moving to Warsaw. not teaching English there but would like to find a catering job to get used of the life there plus learn some Polish then hopefully to open a small restaurant. Maybe offer cooking lessons as well :))
