Hi there, I am new here and am searching for recipes for meat pierogis and potato pancakes. Can anyone help me out?? Thanks Momlovesuall!

potato pancakes - best made only with grated raw potatoes (after grating squize out all juice) add 1 or 2 eggs, depending on how much potatos u have, a pinch of salt, and fry them on veg or sunflower oil on both sides (doesnt take long till they get nice golden brown) make sure you put a thin layer so u will end up with lovely crispy on the edges pancakes. they are usually served with sugar sprinkled on top, but u can also make them savoury, by adding grated onion to potatoes and serving with ketchup. some people also add flour, but i think they lose out of the crispyness, and are not as light.

i love them sweet!

2 eggs to 6 large potatoes will do,
the reason for eggs is that they will "glue" potatoes together so the pancake wont fall apart while frying. so u can go wrong with it, it has no influance on taste of the pancake.

good apetite! they are delicious! :)

ps. when frying, make sure the edges dont burn before the centre of the pancake is cooked, so watch the heat ;)

but not enough potatos and too many eggs will make a mess. i'd imagine the other way around you'll have crumby cakes too.

also grated potatoes should look like a puree, not like flakes. I dont know what u call this type of grating, but i hope it does make sence...

Hi. I found this website looking for a good authentic recipe for making kielbasa. I'm from the Toledo, Ohio area originally, but living out west now, and can't find real kielbasa. I know recipes vary from area to area, so if there's anyone out there who would be familiar with recipes from the Hamtramk area of Michigan, or NW Ohio, I would sure love to hear from you.

You are too funny! I am from Toledo, OH too, now live out west, and... I, like you, and on an eternal quest for "REAL" kielbasa.I am not really sure what that weird, pinkish-redish, uber-ground, rubbery plastic "sausage" they try to pass off as kielbasa is???!!! YUCK!!! My dear husband finally got to taste REAL kielbasa a few years ago and the stuff in the plastic wrapper in the lunch meat section has not crossed his mind since.

I'll try to see if my mom or one of my aunts has the recipe my grandparents used to make their kielbasa. Have you tried to find any ethnic markets online? I am thinking about finding one and ordering some, as no holiday should be without a good heaping portion of true polish kielbasa!

What part of the "West" do you live in? I am in Colorado.

P.S. How does everyone cook their Kielbasa?
I cook mine in a frying pan with a decent amount of water in the bottom. When its just about done, the water has pretty much cooked off, I take off the lid and brown the sausage. Sometimes I cut it up just before I brown it and other times I cut it up afterward.


P.P.S. I am also on an eternal quest for a good chili dog, like the one's from Neti's or Jan's. Can anyone help me with that?

Hi Carolyn - I posted this reply to your other post about kiszka. Have you been to any of the many POlish delis we have in the Denver area?

How long have you been living in Denver? We have a large Polish community here and many Polish markets, 2 Polish bakeries, a new Polish restaurant and a Polish Church and school (with the Krakowiacy Polish Folk Dance group for children). St Joseph's Polish Church has excellent food on Sunday afternoons, my wife helps out with serving it.

Although there are several markets that carry Polish meats shipped from Chicago, my favorite market makes their own meats fresh and smokes them - they are the best I have had anywhere. The market is Sawa Meat and Sausage, they have two locations, one on Colorado Blvd in Denver and another on Wadsworth in Wheat Ridge. They are wonderful friends of mine.

If you are looking for Polish connections and passing on traditions to your family, come and visit us in the basement of the Polish School at Saint Joseph's on a Sunday between 11:30 and 1:30 - ask for my wife Regina. Denver has one of the largest and thriving Polish communities west of Chicago that dates back to the late 1800's, and we are currently in a boom of growth at St Joseph's with a new immigrant population from Poland as well.

I grew up in a Polish family in New Jersey and can't think of a better environment for my family here in Colorado.

We are way back Hamtramck people and make fresh kielbasa once or twice a year.

We buy a couple pork butts, trim the fat, cut it up and then grind it. Get yourself a crock and put the ground pork into it. Add to your liking some salt, pepper, chopped fresh garlic and dried marjorum. Mix it altogether and store overnight in the refrigerator. Next day fill your pork casings and you are good to go! Nothing as good as homemade.

if you're not cooking type go for bigos (hunter's stew) it's time consuming, but easy to cook :)

of course i love perogis, in texs all u can get is the store brand Mrs. T's. stuffed cabbage and potato pancakes are also favorites. i tried to make potato pancakes once and would've gotten sick if I ate all of them because they didn't cook all the way through.
