I googled it and came up with this,

sokolnictwo.pl/falconry.htm

it is a start.
Do you have a bird or are you looking to get one? ;)

Hi Sean...how the hell are you.....I have been awol for a good time , but maybe now time to return..? To cut a long story short...( ha) i recently got in touch with my ex girlfriend , re our son of 28 years of age whom i have never met....I was pleased to discover he is a biker like myself , and also an expert in falconry...The spooky bit is....He has a Polish girlfriend who it seems is also an expert in Falconry and is well known in Poland , her name is Alicja....She is from the north of Poland i am told....I just thought it would be nice to know something about my newly aquired family....

I am very well, thank you.
Wow, I see, that is an incentive to learn about it all right.
There are plenty of birds of prey around here (south of Krakow) and towards Zakopane.
I have not seen anyone with them though.
I will keep my eyes open, as things have a habit of appearing once you look out for them.
Great to have you back!
