Depends on how far in advance you want to book your flight! Most airlines & travel agents will offer some pretty good "last minute" deals. Do a google search. :)

Search any European airlines....Lufthansa, LOT, AerLingus etc

to check on prices for car rentals go to Hertz website, select Poland for country of origin and whatever dates you plan to stay there.
and i usually buy my tix from travel agents (DOMA i think is the name of it). but i haven't been to Poland in over 7 years, so i'm a little out of touch with those things.
