Life / Trumpet fanfare in Czestochowa [7]

Ahh, that is good information to know, though that is not the same fanfare. I heard the trumpet call from the tower at St. Mary's Basilica when we were in Poland last summer- it is quite impressive.

However, I am looking for a recording of the music that plays at the Shrine of Our Lady of Cestochowa in Jasna Gora when the shield is raised and lowered over the icon. If you can help, I would appreciate it!

Life / Trumpet fanfare in Czestochowa [7]

Does anyone know the name/composer of the trumpet fanfare that is played when the shield is raised and lowered at the shrine of Our Lady of Czestochowa? I am trying to find a recording that can be purchased for our church.

Our small Polish parish recently dedicated a silver shield to protect our icon of the Black Madonna which is adorned with jewels/pins/brooches that were donated by our founding ancestors. We would like to obtain a recording of the fanfare to give to our pastor - he keeps talking about the fanfare. I found an mp3 file, but if it is available on a CD somewhere, that would be great!

Food / Polish pig's knuckles (golonka) [11]

That is it!!!

How can anyone say that does not look yummy - and of course it is all that fat that helps keep the meat so tender while it cooks that long. I did an internet search and came up with several recipes. I would be curious if somebody has a favorite recipe, though...

Food / Polish pig's knuckles (golonka) [11]

When we were in Lomza, we ate at the Hotel Baranowski across the bridge in Piatnica. My husband had a dish which consisted of pig's knuckle that he cannot stop talking about. I recently made kapusta with spare ribs and the consistency of the meat reminded him of that meal... so tender it literally falls apart. Even though he is Polish, he cannot remember waht this dish is called...can anyone help? Thanks!!

Food / Zrazy [14]

I was surprised - this recipe came out very well. I used cubed steak, but next time I will use a more tender cut.

Food / kolduny recipe? [8]

My husband remembers his mother making this dish....potato dumplings filled with ground pork. They were the size of a regular potato. Does anyone have a recipe?? They sound similar to knedle, but they are larger. He thinks they were steamed, but they could be boiled. Help!

Food / Zrazy [14]

I just made this recipe tonight- it came out pretty good. We were in Poalnd several weeks ago and tried this dish at dinner, so I looked it up in my Polsih cookbooks when we got home.

Are you still interested in the recipe??

Recipe follows:

6-8 thin frying steaks
2 dill pickles, cut into julienned strips
4 oz ham, julienned
2 green onions, cut into pieces, same length as am/pickles
Mustard
4 tbsp oil
2 tbsp flour
1 c beef stock
4 tbsp white wine
1 tbsp tomato paste
salt and pepper
4 tbsp sour cream

Pound steaks until thin. Cut dill pickles, ham and green onions into even size pieces. Spread each piece of meat with a thin layer of mustard. Divide the julienned pcikles, ham and onions between the steak pieces. Fold in sides and roll meat around the filling. Secure with twine or toothpicks.

Heat oil in large skillet- brown beef rolls on all sides and remove from pan. Add flour and cook until light brown. Add stock, wine and tomato paste; bring to boil and simmer one minute. Return beef to pan, cover and cook over low heat for 45-60 minutes. Add more liquid if necessary while cooking. Transfer rolls to serving dish - remove twine or toothpicks. Spoon sauce over rolls and top with drizzles of sour cream...serve hot.
