Looking for a salmon recipe

In Sopot, I had the most delicious salmon I've ever had. It was not " cooked " with heat, but rather with lemon/lime juice, along with vinegar, and spices. It's hardly unique, but does anyone have a sure-fire recipe they'd like to share?

Don't want to be a killjoy but you need to make sure your fresh salmon has been cooked properly or you might get something nasty.

Do a Google search for Gravadlax. Nick Nairn does some cracking slamon recipes too (can't post links here, sorry).

I think that gravadlax is a Norwegian recipe, in fairness - but I got it a lot as a kid growing up in the Highlands of Scotland (used to get the stuff free from local salmon farm...yum!). Salmon generally not of such good quality in Poland, as river quality won't allow salmon to be grown thereand open shores mean smolts can't be penned there. Poland therefore not really a 'salony' country. Tried some good trout across in Poland when I lived there, though and apparently the 'sum' (catfish) there is pretty darn good too..! (Though I never could get to liking the Carp in jelly (galaretka!) (prszepraszam!)

P.S: Haven't yet met a Polish person in Scotland who doesn't think that I'm a lunatic when I put vinegar on my chips!!

lemon juice actually cooks the fish. btw. cooking doesn't take care of the problem of mercury anyway. enjoy. :D

I found a recipe for Gravadlax by searching Scandanavian recipes, and my salmon will get eaten tomorrow. I tested it today, and I know I used too much pepper. But, it tasted similiar to what I had in Sopot. I did add some lemon juice today, just to be on the safe side.
