Polish meat shops in Wroclaw, Poland

I live in Wrocław at the moment and I am finding it very difficult to find a good meat supplier that can cater for my needs.

In my view a butcher is a person who brings in a whole animal and cuts it according to the customers demand but so far I have not found a 'butcher' only shops with meat. These shops only supply the standard polish cuts of meat - missing out on some of my favourite things!

I am a real meat enthusiast and have been to a meat shop and looked through the meat the shop was going to throw away to find a piece of beef that was a better age and with more fat!

I especially am looking for pork leg with the skin still on(to make ham) and also belly pork, which I have never seen here.

Is it possible to make a special order or is the meat all butchered in the abbatoir?
If so would I have to buy direct unbutchered from the farmer or abbatoir?

My in-laws often buy a pig or calf from some of their farmer relatives. This is probably the more common way and most likely the cheapest.

yes, you need to ask your Polish friends for suggestions on who to buy it from. My family used to do in the past but I know that quite a lot of people still do it in Poland.

I guess I will have to ask around - to be honest my fiancees family are real city folk and they don't really have much to do with village life so I might have to ask some friends maybe.

I tried trawling the internet but without success.
It is very interesting the difference between opinions when it comes to good meat. My future mother in law refuses to eat some meat I buy because it is too fatty(but is fine eating her lean meat cooked with tons of oil and butter!)

After researching the different cuts of meat in different countries it looks like all commercial belly pork goes to make boczek as far as I can tell.

I would quite like to buy a whole pig as I can butcher fairly well - I just need a bigger freezer first!
If I find anything This winter is going to be a feast!

Try and catch the driver when he delivers the meat to the shop. Then see if a quiet word gets you what you want. After all, he is coming directly from the place where the meat is carved up.

Thats an idea - I tried this in the UK once when I want to buy back fat without success but here you can buy it in every shop! I think I should brush up on my polish quite a bit first!

Finding these suppliers is very difficult as I can't find a list of meat companies here. I'll get my fiancee's family to help - her grandfather still is interested in home making sausage so he might know a few people. Also they do have a house in Jelcz-Laskowice - a village outside the town which probably will be better to find farmers and other people who have contact with the sort of thing I am looking for.
