need a mushroom soup recipe

I was in Katowice last year. I had a extremely good mushroom soup. The lady at the resterant was kind enough to right down the ingredients, but not the amounts. Seeing they made it in the resterant it would of been to much to make just for a couple of bowls. The following is what she wrote down.

Onions, butter, consume, borowik (prawdziwek)
Can anyone help?

Don't apologize......I would just experiment until you get the right quantities......wish I could be more help......if you need a taste tester, I will volunteer!:)

Can anyone help?

Ok - I'm assuming it was a clear based soup since it doesn't have any cream or milk in it.

First, crumble the borowiki (1/4 to 1/2 cup) and rinse under water. Put them in a pot with about 2 cups of water and simmer until it reduces to 1 cup of liquid. Finely dice a small onion and saute it in butter until it is soft and golden. At this point I would thicken this soup with about 2 tablespoons of flour mixed into the butter/onion mixture. Then add the bulion (chicken or beef is okay) slowly, mixing with a whisk until there are no flour lumps left. Stir in the mushrooms and liquid and salt and pepper to taste. Simmer for 20 - 30 minutes.

There are diffrent ways of making mushroom soup. Here's a simple version:

8-12 oz mushrooms
4 cups beef, chicken or mushroom stock
1 tablespoon butter
1 tablespoon sour cream
1 tablespoon flour
pinch of marjoram or parsley
salt
pepper

Boil the soup base. Slice mushrooms. Melt butter on and fry mushrooms. Dump it all into the stock. Boil about 15 minutes, thicken with flour mixed with sour cream and some soup base. Add seasoning and heat another 5 minutes but don't let it boil.

Mushroom Soup Recipe Wanted - My Polish Grandma's was the best

I grew up with my Polish grandmother making Pierogi and Mushroom Soup. I later found out she would spend a FORTUNE on the mushrooms which apparently she had delivered from a polish deli in New York City. Back then she would spend around $100 dollars for a strand. I have been looking and looking for a mushroom soup recipe. I can still taste it but funny, I never liked it is a kid until I got older. It was not a brothy soup yet creamy in texture, white in color. I have been looking everywhere. I am going to make Pierogi for the 1st time but I have this wonderful place to fall back on in Indiana, right outside of Chicago so if they don't turn out right, I know where to get those hot, freshy, buttery pierogi I so love. The closest to my Grandmother's I will ever get.

If anyone might know of the mushrooms that are used for this soup or any recipe, I would so greatly appreciate it.
