digestive biscutes - 9, smash these (sandwich bag and a rolling pin) up or use a food processor, add some clarified butter untill the crumbs bind
place some parchment paper (grease proof paper) in the bottom of a shallow cake tin (preferably one which the bottom comes off) - lightly grease the tin with butter.
Pack the bound crum mix into the bottom and place in the fridge
for the filling, use (very naughty but soooo nice) mascapone cheese for best results or any other good quality creamcheese abt 8 oz add some vanilla extract (good quality) about 3 / 4 drops
Small pot of thick creme fresh
mix the creamcheese until smooth then add the creme fresh and then the vanilla extract - I like to add a little lemon juice to give it a bit of a kick, just a squeez of a quater of a lemon in to the mixture
when all the mixture has been mixed thoroughly and is smooth take the cake tin out of the fridge and add the filling the crum base. Leave in the fridge for about 3 / 4 hours
For a topping I like to use black cherries or strawberrys or both!
