What are the best Polish cookbooks in English?

I'm interested not only in standard Polish cuisine cookbooks but in specialty cookbooks, as well. The local bookstores may have one or two, but I never know if they offer the best of the bunch. Recommendations appreciated. Indeed, I'd appreciate recommendations of good cookbooks in Polish as an incentive to learn the language.

I'll give you a review of Marzenna Kuprzyczka's book when I get it. I also have another one that I can recommend but it isn't entirely Polish. I'll state it if anyone is interested.
