Well, what can I say. They took Buffalo Chicken Wings 15 years ago, and now every bar and restaurant has a wing night with tons of flavors. Why not pierog or pierogies??

We found there are traditionalists who prefer potato, cheese, sauerkraut, etc. and there are the adventurists who don't even know what a pierogi is, and will try a cheese steak pierogi or a spinach and cheese or even a bacon and egg.

Sometimes to succeed you need to come up with something different. So far for us, it's been good. Thanks for your interest.

now, what could be better than an authentic Polish pierogi dough recipe filled with something other than potato? Better than McD? Do you always make a sandwich with ham? Or do you change it up once in awhile with another type of meat? Nobody's twisting your arm to try it, but you could at least have an open mind. When I was in Poland I found you could eat anything you wanted........as long as it was pork! But there were a lot of McD's and KFC's around.

Great, but can you tell me why would you have 40 varieties of pierogi?
We Poles can think of maybe four types, so what gives? Is America that bizzarre now? Are there jerked pierogies or pierogies ala mode?

what can I say - typical Americans +rolling eyes+

Don't know why Poles are so precious about this.

Poland isn't exactly the first country to suffer from tenously associated food being described as authentic or traditional.

I can guarantee you that there are restaurants in Poland claiming to serve "authentic/traditional" Greek/Thai food that would make the average Mr Demos or Mr Boonliang weep with laughter.

Exactly, same as in the UK you have plenty of Indian restaurants that are nothing like the food in India. Let's be honest, there is a market for authentic ethnic food, but it will never be as big as the market for what people percieve to be ethnic...hence why most restaurants in a city will have menus and dishes more suited to local palates.

Yes, and pierogi are by no means exclusive to Poland - they exist throughout eastern and central Europe. There are however quite a few traditional flavours. Personally I can think of a couple of dozen types that are available in Warsaw. Almond and honey pierogis are good. My favourite are Pierogi Lwowskie, filled with something similar to Bolognese sauce.

On a similar note, I notice there's a new restaurant in Warsaw called "Ye Goode Foode". Sounds grizzly.

Okay heres a list of pierogi made by polish people have been asking around

plum
Smoked ham sausage and cheese
Mushroom
pork
bolognese
smoked chicken n cheese
Chilli and cheese
and about 2 dozen variations on the above

Made the plum ones absolutely delicious

Yes, they are delicious but they are called knedle, not pierogi. They are round shaped.

It's all good, man. I think only the strict traditionalists are upset.
Your stuff sounds delicious and is certainly unusual. Next time I'm up that way I'll have to stop in and check you out.

Mostly not. Traditional Polish are: ruskie (cottage cheese with potatoes), with meat, with sauerkraut & mushrooms. Some also consider as traditional pierogi with blueberries.

Maybe I'm alone on this one, but if you want to offer Polish food, it should be authentic.

But it's not Polish food, because it's called "pierogies". This is America not Poland. The Italians don't get mad when we put shrimp or anchovies on pizza. Polish people put ketchup on pizza.

I've just looked for a recipe but can't find one online. It needs to be a very dry bolognese sauce, for obvious reasons. They were a speciality of the Hotek Georges in Lwow back in the 1930s.

My ideal pizza is anchovies, capers and olives.

Polish people put ketchup on pizza. That's just weird.

I think so too, but in PL it's perfectly normal and waiters are often surprised if you don't want the ketchup.

The mac part with the pierogi dough might make it a bit too heavy. But with mac&cheese sauce only it might be quite nice.

yucky orange-coloured fake cheese known as Velveeta

That is not real cheese. But I do love the strawberry periogi with sweetened sour cream for dessert.

I quite like processed cheese, it will never be as good a proper cheese, but on a sandwich when you have just woken up after a long night and need something before work it hits the spot.
