Raw seasoned meat, finely grated potato, held together with a little potato flour, boiled then fried. According to Babcia ;-)

edit:

kartacze

Babcia says it has three different names base on where you reside in PL. But I was close with the spelling!

Edit!!!!!! pyzy :)

Is it called pyzy in Poznan?

Yes. Pyzy, called so in all Poland, stuffed with meat and sprinkled heavily with skwarki - fried lard.

As for kołduny, they are pierogis in fact.
Pyzy are similar to kartacze.

Probably, but I was only correcting your spelling. One kartacz, two kartacze

But I was close with the spelling!
