Have you done this? Can you think of any suggested roads or even whole routes that I should take? Fun roads/routes with winding turns, changes in elevation, etc.
Do you know any good places to rent a motorcycle? Helmet laws, I always ride with a helmet on, but should I carry a spare for a passenger?
All I know about driving on all sorts of bikes, choppers, etc. it's legal here in Poland :) As far as helmets are concerned - yes, everybody who uses a motorcycle has to put their helmet on - it doesn't mean actually whether you're just a passanger or not. Everyone has to adhere to this rule.
The next important thing worth remembering is that you always have to turn on the motorcycle's lights even when the day-light and good driving conditions are provided.
I would also recommend you to be more careful here. The roads here are generally pain in every driver's a.. back :), namely most of them are narrow with plenty holes on them, etc.
Finally, there is still just few motorcycle users in Poland, so there are minority. Still many car owners simply don't notice them on roads - so you'd better be careful especially during overtaking them.

Yes this is very important.

Bikes arent very popular in Poland - and the car drivers - especially in Warsaw drive very aggresivly.

Can you help me out? Will be visiting Krakow in September and Oct. I am looking to rent a bike for a couple of days for touring S. Poland. I can't seem to find a dealer or shop to rent a bike. Do you know of a rental company? Any other suggestions?
I rode from London to Krakow and back in 2004. Motorway all the way to the German/Poland border at which point the motorway simply stopped (although they have built it now).
My only advice is do it in summer time because wet and cold on a bike for so many hours isn't fun. Plus choose something comfy rather than sporty.
Hiring vehicles in Europe is generally very expensive (relative to the US from what I have seen). If you have the time to buy something before you start and sell at the end that would be most economical, but you will have to jump through a few hoops to be able to register your motorbike if you want to register it in somewhere such as Poland or Germany.
