Call the universities you are interested in, and ask them.

No. If you can't get into the university at the first attempt, it's unlikely you'll be able to change.

I would imagine you would need to be working to gain that kind of status and to work you would need a visa since you are from outside of the EU, simply studying in a country doesnt entitle you to live there forever..

in short No!
If not a EU EEC citizen then you will need a visa (and as you will have finished studying you will need a different visa to a student one) .. you will need to provide proof that you can sustain yourself financially in Poland (so you will need to show your bank statements stating you have xx amount of savings that you can live off so not claiming benefits) and if you haven't you need to be in employment in Poland preferably before a visa will even be contemplated to be issued.
A Residence Permit will only be given after 5 years of living in Poland as as visa's arent issued for that long for what i am lead to believe ... it isnt as simple as you seem to think!

No. No European country to my knowledge accepts time spent studying as being permanently in the country - you will have to apply for a residence card on the basis of full time employment in Poland.

A Residence Permit will only be given after 5 years of living in Poland
Permanent Residence is 5 years, starting from the date of the first full time employment.
Not sure if this is quite correct as I have just been granted permanent residence. I have lived here for 7 years but never worked.
