I am the executive chef of a large international hotel group with responsibility for 30 staff and a €4000000 a year food business that involves at least 80hours a week hes a kitchen porter doing 39 and scratching his arse unless i beg him to do his job. No thats not his right it is his right to work as hard as i have in my career and to get paid what i get paid by working for it not by cheating the government

When you have the balls to remove yourself from the safety of your homeland I will have this discussion but as you have no life skills to base it on you are just wasting my time

After all those things you read in the news papers you really start to wonder you know.

You seem to be taking stuff I said and twisting it into an argument about how terribly the polish are treated by the Irish

1. You go to a foreign country and in your place of work you speak only your native tongue with your fellow countrymen 6 of you 1 english speaking thatt is ignorance yes

I grew up in Africa I speak 6 different languages in Ireland english in Holland dutch when I move to poland polish its a respect thing

2. In my town in my place of work there are people on minimum wage driving merceded benz 7 actually new ones too

when I asked how they can afford it they cheat the government they collect rent allowance child support and so on and so forth and they are proud of it

Just as there is a minority In ireland who have a bad attitude towards poles there is an even larger minority of poles with a bad attitude towards the Irish.

Some ain't enough. And i hope that Ireland and the U.K will realise what they lost when all the poles decides to leave the island that threats them like cattle

Ther are thousands of poles who are financially better off because they came to Ireland

That attitude have been there all the time.

and i suspose you will tell me that that minority does not exist in poland and that when I move over there every single person will greet me with open arms BS You are one of those eastern europeans who is still walking around with a chip on his shoulder so do us both a favour yeah

This tends to break up the tissue fibres too much and allows the natural juices to be released too quickily. Fry on a very high heat and finishing in the oven will give you a much better tasting cut of meat, especially if you then allow it to sit for at least 5 mins after cooking.

sLOW COOKING ONLY WORKS ON LARGE PIECES OF MEAT UNLESS YOU BRAISE THEM, FINISHING YOUR STEAK IN THE OVEN WOULD JUST DRY IT OUT. The whole theory to slow cooking is that you cook your meat without damaging the tissue and the low heat for a longer period of time turns and grissle into jelly wich makes it mor pallatable.

Meat is a muscle when you heat it it contracts this bursts the tissue hence you have the bleeding.

Tenderising it splits the tissue apart enabling it to be cut easily and chwed easily this damages the meat and does result in a dryer cut of meat

Spend extra money get a good cut

Keep the cheap cuts for roasting

It all depends if I can find the right property at the right price first.
What it actually becomes will depend on research
what the poles want
limits imposed by local laws
Licensing
and about 4000000 other things
and what the swambo union thinks about it

No set menu will keep it fresh...but have you ever done that before? Seems like you'd end up trying to win people over with quality and atmosphere instead of a favorite dish. Maybe not such a great idea over here?

Imagine the Restaurant. You got you Buffet Area Theres a huge Mirror Grill in the middle, you got aa wok on your left you gat pasta cooker on your right and little chef stood there. You have your Ingredients in a display Fridge. You have a Menu somewhere visible. Guy Walks up to you I want the Que se dilla with cheese and extra chilli, Piece of the Marinated Carp and the Chicken. I throw it on "sir" gets his plate walks over and Collects his starters "anti Pasto" "tapas" type thing loads of fresh salads.

He eats he Comes back, Takes his selection of vegetables starch gets his food and boom off you go not quite the normal buffet

Its just an idea research would need to be done Im just not sure that an ordinary run of the mill restaurant is gonna work there the most important thing about running a restaurant in any country in the world is you hav to get peoples tongues wagging

The current Idea is this. "International Cafe" Serves wines and loads of tastes from around the globe kind of an eat all you can type place

International Cafe on the road(Chip Van) Food would be prepared in the cafe served out of The van lunchtimes and whenever wherever the market could be found.

I am over next week so now I know where I am going what I am lookin for Guys post ur opinions pleas

Did they though? Yes, of course some did, especially those connected with construction

Not just Construction though Hotels cut there employment what 20-40% The recession hit everyone downsized.
The Midlands town where I am now probably about 1000 peeps have gone home. I am very friendly with alot of folk in the polish community and were discussing this a while back.

Of Friends of mine and my gf in the last 2 years I know of at least 50 poles who went home 51 if i include my gf. The recession changed how the irish treat the Poles you would be surprised at some of the stuff ive heard. Read the papers see who got assaulted by who its becoming alot more frequent.

No not mass Exodus but close enough.

and before any1 say anything I am not judging the Irish It is just sum folks but you would be surprised with how many people say that the country is downn the toiets cause of the poles

Okay heres a list of pierogi made by polish people have been asking around

plum
Smoked ham sausage and cheese
Mushroom
pork
bolognese
smoked chicken n cheese
Chilli and cheese
and about 2 dozen variations on the above

Made the plum ones absolutely delicious

English Cuisine is basically European with there own twist nowadays anyway, What I am thinking is this. 8am -8 pm. All day breakfast is a must. Home made Everything using good qaulity but cheap. Had a place over here what we did as Cheapest in town I mean we did a 18oz burger with all the trimmings for a tenner. Our most expensive dis was 18.00 euro but that was a 14oz steak. My business partner was a theif so w had to close. I have the advantage that I can keep my wage costs min8imum Im a workaholic so no probs there I would look at buying the actual property so again lower overheads. My concerns are simply this. I would need at least 40 people a day through my doors sounds easy its not.

Come buy a massive pure beef burger for ??zwolty or go home cuz mom made pierogi or schabowe. Have a Huge greasy fry that makes u unable to move for a few hours there just arent enough expats in Wroclaw to actually make a differenc. Not even going to consider doing polish food as home cooking is such a tradition and would have to be trying to reinvent the wheel to attract people and would go bang.

Thanks for all you suggestions guys keep them comin and I might even call the place the PF Cafe with computers in it so ye can eat yer burgerss and keep postin lol

Wroclaw boy I was offered a Chip Van a few weeks ago at a steal. Places like that in england make money from drunks after night clubs, workers on their way to work and lunch time workers are the Polish Community ready for that much grease?
