Happy to find this topic here! We have dedicated so much time on researching this very subject! Check out Polish American Celebs on facebook. (No need to join group to see the page!) It's an ongoing process for us ~ there are so many famous Polish musicians, actors, writers, journalists, artists etc. etc. And happy to get any feedback or suggestions too. (We are focusing on Polish Americans for now... Chopin, Paderewski, Możdżer etc. will have to wait, but we will eventually get there too!)
