Hi, I have a friend who moved here from Poland and his mom makes these crepes filled with mushrooms (always at Christmas). I have been trying to get the recipe for years and he doesn't bother to get it for me. His mom says "she just makes it." Which I guess means it is in her head and she doesn't want to write it down. Another Polish friend told me the food I am interetsed in may be called Krokeity (he is a roomate of the guy whose mom makes it). So I have looked up recipes online and I found one but it has sauerkraut in it. The recipe I want, is just the crepes with mushrooms inside and fried on the stove. It was the best thing I have ever eaten. If you have a recipe for that I would be so grateful! My email address is Meljoy444@aol.com. Thank you so much! ~Melanie

Hi. I'm looking for some easy/quick recipes. I work with college students and on Monday nights we cook. This week is Polish food. I need something that can feed anywhere from 2 to 7 people. I also need at least one veggie dish as one of the students is a vegetarian.
If someone could email me a couple of ideas I would be forever grateful!

Wow, thank you for having this forum! I am making a big birthday feast for my Polish father-in-law this weekend--he'll be 91. I did it last year too, and it was a huge hit with him, my hubby, and my friends. And the leftovers--wow, that made all the work worth it!
One thing I didn't make were potato pancakes, because I didn't think they would keep crisp in the oven and I didn't want to be frying them during the party. Is there a trick anyone has come up with? I know that would put this year's party over the top!

Those are potato pancakes. In Polish: Placki Ziemniaczane.
potato pancakes are made with raw grated potatoes.. Kluski slaskie or kopytka are made with parbolied mashed potatoes

nah i dont think u can make them any other way than frying and serving straight away. and even if fried, when they get cold, they lose out of the crispyness and become soft and kind of chewy
Hi Krysia, If you add handfull of dried plums, it will make bigos devine! im not sure about allspice, we never add this to our bigos.

Yes, that is what I thought, too. We're having about 50 people so that's not feasible. They will have to make do with everything else I'm making! I just finished the bigos tonight so it can sit for a couple of days. MMMM!

Add salt to taste, one tablespoon of sugar to one quart of cottage cheese.
Place in muslim bag. Some twist bag and hang for a week. I have pressed the bag for the same week using a dish and wrapped weights. Why blend it when it tastes delicous as is,
dry and crumbly.

I think you are making fun of me but I used to live in the southern part of the U.S.
Those southeners will eat anything. LOL
have you ever heard of dry cottage cheese?
Dry cottage cheese is the same as Farmers cheese. I just bought some in a Polish deli but it was imported from Kracow.
