What ethnic dish should I insist on being treated to while I am in Poland this year?

I will be staying a week at end of spring..well a day travel recovery prolly....
It will be in the Białystok region we are spending 2 days in undisclosed Mtn retreat. rest just outside city.
And how shall I dress as thin blooded Arizonan?

Personally I really like duck blood soup and used to thoroughly enjoy being served it (which, naturally enough, happened quite regularly).
Proper bigos is also high up on my list of Polish food but you'll be here at the wrong time of year.

BTW, "undisclosed Mtn retreat" in the Bialystok region? Are you sure about that?

Although if you are just outside Bialystok, you really should make a trip into town to try some of Poland's very finest beers, not an ethnic dish, but certainly a few Polish specialties. multibrowar.com

I'm afraid it will probably remain undisclosed in the Podlasian flatlands. Try Sękacz. If you are adventurous, try flaczki, tripe soup, although most women are a bit squeamish about that.

Hard to say for late spring, but it shouldn't be cold by then. If you get chilly, you can always buy a sweater in the excellent Alfa and Biała shopping centres/malls. Don't leave without catching an Orthodox mass, preferably at św. Mikołaja Cudotwórcy (Cathedral of St. Nicholas the Wonderworker), which has the best Orthodox choir in Poland, I reckon. If you miss home, Elvis Burger at ul. Białówny 9, just off the main square, serves great burgers.

Chłodnik Litewskie (should just start appearing in late spring if you're lucky) is a must, as is Czarnina (restaurants only, and usually only good ones). Both soups. Too early in the year for Botwinka (another soup).
