Need some Polish dessert recipes

I used ready made cheese coz grinding it last time was drudgery.

Huh? What cheese are you using normally to grind it? I just buy ready made tubs of Twaróg mielony. I do have a vague memory of some cheese not being minced though....

That's a new one on me! Pudding mix, do you mean budyń? That seems to go into a few Polish desserts. How did the experiment turn out?

Well, the cheesecake is OK, but to me it is again a little failure coz it is too fluffy. It is wet and heavy but too delicate to my teeth, I need sth more al dente. I wonder if I didn`t add too much whisked egg white. I used 11 eggs for 2 kilos cheese. The recipe mentions 6 eggs per kilo.

In that recipe it says to use unsweetened condensed milk. In the UK, we only have sweetened which is thick, pale yellow and very sweet. I looked up unsweetened condensed milk and it is the same as evaporated milk. The taste of evaporated milk is completely different to condensed milk, and appearance wise, it is off-white and runny. It used to be used years ago as a substitute for milk in coffee. Is this what you used?

That would definitely put lots of air into it. I wonder what it would be like without the addition of egg whites. It would certainly be denser. BTW, it also mentions adding 1 budyń in that recipe. Is that just the powder not mixed with milk? I have used budyń before in desserts but have made it up with milk as you would for custard, which is basically what it is.

No, I used sweetened milk coz that`s what we had at home. Because of that, I added only one glass of sugar instead of two.

You can still buy unsweetened condensed milk milk though it is getting rare, replaced by evaporated milk.

I took a few pieces to work and found out more faults: watery and crumbling. So, nearly a complete failure. The previous one was better. Don`t try this recipe out, it is worthless. hahaha

Or..... ! Was it because I used ready made cheese? It looked like farmer`s cheese that you eat with a teaspoon. It was probably the culprit.

Well, I will check the recipe out again with cheese ground before my eyes.

Don`t try this recipe out, it is worthless. hahaha

To be honest, I prefer cheesecakes with a pastry base. I feel like there's something missing if it's just cheese. You'll just have to try out other recipes. A friend of mine makes Sernik Wiedeński which is quite heavy, and she puts raisins in it too.

Really? It looked like cottage cheese? I haven't made a cheesecake for a while now, but I don't remember the cheese in tubs I used as looking like that. I forget the brand I used now though. I don't think I've ever bought Twaróg in the unminced form.

Yes, and when I opened the tub there was a little water on top. That could be the reason.

A friend of mine makes Sernik Wiedeński which is quite heavy, and she puts raisins in it too.

Polish Cheesecake is one of my favourites, especially with raisins.

It's my most favourite dessert Milo, I have made a few different ones now. I might make one this week as I'm currently off work, and need to find something to do :) I particularly like sernik z rosą.

From a Polish shop Lenka. There isn't really a British equivalent. I wouldn't use cottage cheese for it. The closest cheese to Twaróg is one called Quark, which I have seen only in the last couple of years over here, but is common in the US. I expect supermarkets stock Twaróg Sernikowy in the Polish section, but I prefer going to the Polish shops as I usually pick up things there that I know the supermarkets won't have.

To much work.
I make a no bake cheese cake using cream cheese, sugar, sour cream, vanilla and a graham cracker crust garnished with chopped strawberries.
Very easy and very good.
