I have had the good luck to learn to make some Polish dishes before my ancestors passed. I notice many recipes for Pierogi dough don't include sour cream! Also I make KILLER zupa kartoflana, with bay leaves, important. Other recipes I learned Placki kartoflane, Golabki, Chlopski Posilek, Kapuœniak, Rosoł z kurczaka. I never could stomach the wild mushroom soup...ewwww, icck! Ok, I want to beat my sister this year on the phone to proclaim "Hi Hopey, it's Faithy, don't forget, it's Pączki Day!! What day is it on??

Pączki Day is what Shrove Tuesday (the day before Ash Wednesday) is known as across Polish America. In Poland it is Fat Thursday (Tłusty Czwartek), the preceding Thursday, which ushers in the final, extra-long, 6-day weekend of pre-Lenten merriment.

Melancholia;
By all means. Use sour cream in your pierogi dough, It makes it real tender.. As far as I am concerned. That is the secret to good pierogi.

I also make my kluski with some sour cream. I never buy store bought ones. Home made kluski cook in three minutes. Whereas commercial noodles take 12 to 15 minutes

The French celerbate Mardi Gras (Fat Tuesday), for the Połes it's Jeudi Gras or Tłusty Czwartek (Fat Thrusday).
