ze Szczecina, ze Szczytna, ze Wschodu, when you have consonant clusters like these, use ZE
the same goes for w/we eg. w poniedziałek, we wtorek etc
It's simply easier to pronounce when you have a vowel:)

Szczecinia
This would have been right only if Szczecin was a masculine singular noun with the final n being a Polish ń but in fact it ends in a boring standard n so it must be Szczecina!

I know that in polish they say jestem w Zakopanem.
Its z Zakopanego. Jestem w Zakopanem means i'm in Zakopane.

Yes, where most people make the mistake of thinking that it would be jestem w Zakopanym, although it would sound quite logical that way.

Is this in fact Sopot, near to Gdansk, or is it indeed another town all together?

Note: There is no place in Poland calle Zapot. The confusion stems from the German version of this placename, which is Zoppot (pron. tsopot) so it is likely to be pronounced by English natives as Zappot.
