Food / Kołacz - POLISH CHEESE/WHEEL CAKE [12]
This is my grandmother's recipe for koloc. I rember her making it around Easter time. As kids we called it Polish pizza. It makes a large quantity, you cann sice it and freeze some without any loss of quality.

KOLOC
2 cups warm milk
2/3 stick butter – melted. (add to milk when melted)
1 tbs. salt
2 tbs. sugar
Dissolve 1 package dry yeast in ¼ cup warm water
Add yeast mixture to milk. Beat in one egg. Add 7 to 8 (or more) cups flour gradually
To make a soft dough.
Knead Dough
Grease bowl & let dough rise until double in size
Shape into a ball.
Place on a floured pizza pan
Cover and let rise again.
When double in size, shape to pan, with a raised edge around the outside
CHEESE MIXTURE
3 pounds dry cottage cheese (substitute - farmers cheese)
½ lb butter
8 beaten eggs
2 tsp. salt
6 wooden spoons of flour
¾ cup raisins (more if desired)
Mix all together and spoon on top of dough
1 egg yolk, 3 tbs ½ & ½ , 2 tbs. flour
Mix with a wire whisk until the consistency of thin white sauce (add more ½ & ½ if necessary). Drizzle over top before placing in the oven.
Bake at 350 F. for 45 min. to 1 hour or till crust is a medium light brown.
