My grandma has always said that her mom made this really good pastry. It was a yeast based dough that had almond paste in the middle and was cut like a half moon shape. I was wondering if anyone knew what it is called or had the recipe. Thanks!

Maybe "rogal" or "rozek" (it has half moon shape, don't know about the rest though :).

Was the paste wrapped in the dough and then bakes and cut?

This probably ain't it . Called Marcepan (Marzipan)

1 lb blanched almonds, finely ground
1 lb powdered sugar (confectioner's sugar)
2 Tbsp orange water or rose water (Can be obtained from your local drugstore)
food colouring and decorations
1
Combine ground almonds, sugar and flavouring in a saucepan. Cook until mixture leaves side of pan.
2
Roll almond mixture on a flat surface to a 1/2-inch (1-cm) thickness. Cut into shapes, mold, paint with food colouring, decorate, etc.
3
Place on wax paper to dry for 2 hours.
