A Polish Soup-What is the name?

I am a fourth generation Polish American, and unfortunately do not know many recipes, traditions and such of Poland.

My Aunt makes a Delicious soup every Easter.

Its mostly a broth with mushrooms, onion (I think) and maybe sour cream?... We cut up Polish Sausage and hard boiled eggs and add it to the soup before we eat it.

My family calls it borsch, but it does not seem to be the traditional borsch -which I thought was made out of beets.

Does anyone know what this soup is called? My aunt does not know the recipe right now.... and does not 'remember' what is in it.

yes, white borscht. there used to be a thread that talked about the sour starter (kwasek) but i haven't found it. you can find good links on google if you use the key words mentioned by both of us.

it's called white borsch or żurek.

Yup, white borsch. Borsch is a word for any polish soup I think. My grandma makes the Easter borsch as well and it's a family favorite.

No, it's not. Barszcz is either the red barszcz (clear) or Ukrainian (with lots of vegetables, beans, and with cream added) or white (żurek). The spectrum of Polish soups is much, much broader than that ;-)

How about mushroom soup with sour cream? Or krupnik with bits of bacon? Or rosół on a very cold day? Or chłodnik during a heatwave? :-)

You need to try them all!

My grandmother made a soup that contained cabbage, tomatoes and sour cream (and I don't know what else)? Would anyone know what soup that would be and any other ingredients that went in it. There was no meat.

Also, her sauerkraut is what I miss the most - it contained dried mushrooms. Recipe?

Possibly its a form of Kapuśniak, which is cabbage soup. My mom has made it with tomatoe paste before, so it could be the one you're talking about. I'd love to be of more help to you but I have no clue what else goes in there or how its made.

does anyone have the recipe for Polish white Borscht or the Polish Mushroom soup? My aunt used to make a mean mushroom soup but she has since passed away and all of her recipes were lost(long story). My mother passed away suddenly taking the white borscht recipe to her grave. I miss both of them and their great cooking.

Borsch is mostly traditional Easter or Christmas Eve soup. It is made different and served different however.
What you mentioned above it would be the one served at Easter, with chunks of sausage, eggs, bread, including small pieces of blessed food from the Easter basket. I just had it last Sunday! Yummm.

Grandma{Bucia} made a soup for Easter called "zurr" she use kielbasa, ham chopped onions,boiled till it made a broth, she then took some reg. cornmeal mixed with water and added it to the soup and it boiled till it got kinda of thick. Took it off the heat, dded chopped eggs and stirred in one tablespoon vinegar befor she put it on the table. We have it every Easter and sometimes on other days My family love it

HAH! How well I know this BARSCZ. Although my family is gone, I still make this soup more than just for Easter. It is delicious.

Here is the recipe
about 3 qts of water
one ring of fresh Polish sausage

Boil for about an hour
Make a zapraska consisting of a half of cup of milk
A half cup of sour cream
Thicken with flour

Pour into soup. It will turn white with stirring until all lumps are gone.

Here is where you have to be carefull

Start with a table spoon of vinegar
stir>>>>> TASTE Add as needed to taste

YES EGGS are a must. Hard boil eggs and cut in half and add to the borscz...
SERVED WITH A GOOD SEEDED RYE BREAD

We too added ham and horse radish at easter
This is a matter of choice

I to rember this soup very well.always made for easter and sometimes for christmas eve.mom stated with either a good kielbasa ring boiled in water or pork ribs and some sourkrout boiling in water then removing all.she then added sour cream or milk or maybe even farmers cheese to thicken.I never noticed onoins or any mushrooms.at the end we would put soup in a bowl then ad to our bowles the blessed cut up hard boiled eggs ,the cooked kilbasa.framers cheese. good hot horse radish.and a peice of fresh ryebread.if she used the ribs and krout we would have that on a plate seperatly.always a pork base to this soup, wether ribs or kielbasa and she would never make it if she did not have the farmers cheese.
