Inviting family from Poland to USA for a wedding - do I need to send a invitation to the US embassy?

My sister is getting married in August, here in Chicago, and so we've invited my Aunt and Uncle to join in the festivities. They said that they need us to send them a notarized invitation.

1. Is that overkill nowadays?

2. Do I send the invitation to my Aunt and Uncle? Or directly to the embassy?

As far I know, during the application process for the American visitor visa, the invitation isn't necessary at all. Of course it may be helpful to have one, but it's not obligatory, therefore it doesn't need to be notarized, and may be presented in any form.

Just send this invitation to your relatives, and they will bring it to the interview at the U.S. Embassy.
Requesting for the U.S. visitor visa, in order to not be rejected, the most important issue is to submit the all possible documents to show that the applicant have strong ties to his own country - in case of your uncle and aunt - to Poland.

Infact a wedding card as invitation will be enough, and if they can show they have a stable job and can afford to travel until you can send proof of funds. Also never ask for long term stay until they can prove one can afford to.
