Gesundheit is used to wish good health to a person who has just sneezed so I guess it would be something like "na zdrowie" but I might be wrong here.

That's what Google translate gave me. I figured since it is used when raising a glass (toast), there might be something more appropriate. If not, na zdrowie is fine with me.

Do you remember that old joke, strzyga?
A meeting of Central Committee of Communist Party. Stalin reads his speech. Someone sneezes loudly. Stalin stops, looks around. Everyone trembles. [Polish transliteration of Russian sentences follows]

- Kto czichnuł?
- Kto czichnuł?
- Kto czichnuł?
- Eto ja, towariszcz Stalin.
- Nu, zdarowja żełaju, comrade!

- Kto czichnuł?- Kto czichnuł?- Kto czichnuł? - Eto ja, towariszcz Stalin.- Nu, zdarowja żełaju, comrade!

In the version I know the first three rows of the participants were escorted out and shot before the sneezing culprit admitted his guilt :)
