Are there any czernina fans on PF? If so, where do you get your duck (or goose -- also good!)

Not only - czernina's great, but one of those things normally made in restaurants, even in PL.

I had czernina when I was maybe 15-16 years old and did not like it. My mama never made it but my two brothers married into families who did. Tried the soup in both places.

My friend in Chicago actually have the same question as you Polonius. She loves czrnina and would like to make it at home but can't find a place where she can get duck's blood...

It would be great if somebody knew it.

If made well, this is one of the grandest soups ever -- rich, tangy, fruity, sweet & sour -- it doesn't get any better than this. May be served with egg noodles, potato-ball dumplings or potatoes. ) PolAm kids used to call it 'chocolate soup & bullets' (referring to the stick-to-the-ribs potato dumplings).

I've never had it with the dumplings, but find dried fruit (or even fresh redcurrants) really lift it. Though if you fancy a girl and her parents serve it to you - well, better look elsewhere!

Good stuff but it has been a long while since I've had it; like Eurola.

It's impossible to find the blood in Poland and America as it is blood. The only way to get it is to know someone on a farm who has some ducks or go hunting for them.

That's exactly how we did it in NYS when I was (much) younger.

It's impossible to find the blood in Poland

until you venture out into rural Poland. :)

Oh well, gotta look for a farm then but I wonder where the restaurants get it when they have it on the menu. Next time I see the soup on the menu I'll ask..

Yes! yes! Now it rings the bell. It was in 'Pan Tadeusz' where Jacek Soplica got the soup ( just found it on Wiki).

A shot-down wild duck will have usually usually lost much of its blood after your trusty golden retriever fetches it.

^ Yeah, my grandmother would render the duck unconscious with one hit and then slit its throat to drain the blood.

Friends of our have a farm and we are able to get a fresh supply of blood when the ducks are ready for the kill.This is only good when the blood is very fresh

Yes-----also goes by the name of----Jucha, juszka, polewka, zupa z krwi, czernina, szary barszcz.

I just had this for the first time in Olsztyn recently. I loved it! This is definitely giving flazcki a run for its money on my list.

Czernina, czarnina, jusznik, czarna polewka or whatever it's called is a great Polish delicacy. The trick is in the fina balancing of flavours which should be sweet, tart and winey with a nice fruity bouquet.

Go to Poznań and enjoy czernina to your heart's content. Try Złota Kaczka, Hacienda, Bambaryla or Restauracja Graczyk.
