I'm vegetarian and think I have to first soak it in (vegetable) broth for ten minutes. I'm trying to cut down on fat, so I really want to try it, but I don't want to coat it in batter and deep fry.Is there a healthy way to cook it, or a healthy recipe using it, that someone can recommend?Thank you.

I think it is a breadcrumb dish batter would be even worse you ONLY fry that.I looked at this thread earlier and have no answer other than being vegitarien sucks, especially with these types of dishes. I mean soups and pastas are great as vegitarien but a veggy kotlet, i cant think of anything to make that appealing.If i were you OP id take the recipe, pre fry all the veg smother with cheese and just wrap it up in pastry and bake. Forget about the breadcrumbs/batter if you dont want to fry.
