Best kielbasa to use for Bigos.

Ok.We all know how to cook Bigos.
I always add Boczek and whatever meats are available.

But which is the best kielbasa to add?

My mum and all my Polish aunts have died now, so I can't ask them.
One of them told me Tucholska, but that didn't seem right to me.

As a kid, I remember the best bigos and the kielbasa was king! But I don't know what it was.My family came from Eastern Poland if that helps.

Any ideas?

I'd say kielbasa zwyczajna? Definitely, don't use parówki/wieners sausage. Many Polish cooks add pork (in addition to bacon) too.

That looks very much like the kielbasa I remember in my childhood.
Does the skin toughen up a bit in cooking?

Sure, you put it with the skin and it's probably the best part if the quality of the sausage is good. Don't forget about garlic and other spices :

Now I just have to search the Polish Deli's to find some......

Zrazy is my favorite as well, but never in a million years will I be able to pronounce it. So, Im sticking with Beef rolls.lol

All he eats is sledz and eggs, it must smell very bad at his residence.

To be honest 90% of what pawian posts as his food is weird by Polish standards, on top of it it seems to be badly made.

Im sure he has a bathtub behind his shed somewhere, just waiting for the weather to warm up some more.

I purchased there kapusta rolls from the Polish deli but my wifes cooking was 100x better.

What is your favourite sausage for Bigos?One aunt of mine said Tucholska,or something similar, but searching on Google did not bring up the sausage I remember and loved.Opinions?

I forgot that I had asked this question before.....I have yet to try Kielbasa zwyczajna....

My family used to make Bigos with just Kapusta,Cabbage,Kielbasa,Boczek and other meats.But many years ago we went to a Polish festival and they were selling Bigos with a tin of tomatoes added.I loved it so much that I have made it with tomatoes ever since.
Opinions?Tomatoes or not?

You no longer eat bigos? Yes, tomato paste is a must for the best Polish bigos. Without it, you can only make Łazanki (just add macaroni to it).

This is not true, initially bigos was made without tomato paste, but today everyone adds whatever they want... for example, dried plums.

I think that's about the size of it. I put tomato paste in it. I also add ziele angielskie, bay leaves, and black pepper.

You using the Prymat brand liść laurowy and papper? Pudliszki koncentrat? Otherwise it does not taste same, pfuu

You cannot always get these brand in every shop in UK. what masakra! Hard life here for us

You can go to a continental shop run by gangsters with Latvian passports and a collection of Matryoshka dolls next to the samovar.

The unique ground pepper and unique bayleaves are next to the double-priced margarine, white beet sugar and teabags, presumably grown in a tea plantation on the slopes of Roztocze.

Or just bring it in your hand luggage on Wizzair like you did with the rice and the cornflour.
