Hard to do.
Common saying is:
"(...) zrdrowia, szczęścia i pomyślności", which is nothing but a cliche.
You want to wish a special thing to any person during the Xmas in Poland - just say so, from your heart, with all the words you know. That'll do.
Poles are pretty language-error-proof.
